This is a rich poblano pepper stuffed with

chicken, pork and beef

plus a mixture of pears, apples, peaches, raisins, almonds, pinenuts,

chopped tomatoes and white wine

The pepper is dipped in an egg batter and lightly fried.

It is served over a delicate walnut sauce and

garnished with tart pomegranate seeds.
